Remove meat from coconut, saving the milk. Grate coconut, carrots,
and beet (all should be raw) and mix in salad bowl. Sprinkle raisins
over top and pour in about half the coconut milk.
Note:
Some beets are juicier than others so you may have to add more or less
coconut milk or the salad will be too moist.
