Indian Spicy Pumpkin

      Title: Spicy Pumpkin
 Categories: Indian
      Yield: 2 Servings
 
      2 c  Pumpkin; cubed
      1    Onion; chopped
    1/4 ts Fenugreek seeds
    1/2 ts Turmeric
    1/2 ts Red chili powder
      1 ts Salt
      2 tb Oil
    1/2 c  Water
    1/2 ts Black mustard seeds
      1 pn Asafoetida
 
  Heat oil in a wok and cook mustard seeds until they sputter. Add
  fenugreek seeds and asafoetida and stir for 1 minute. Saute onion
  until soft. Add turmeric, chili, and salt, and mix well. Blend in
  pumpkin cubes and stir for another 2 minutes. Add water, cover, and
  cook on low heat for 5 minutes. Uncover, stir, and cover again. Cook
  this process until all water is absorbed.
