Title: Martin's Rabbit With Apple & Cider Sauce

1 Rabbit
1 l Apple juice
1 Bottle dry apple cider
1 Granny Smith apple
Flour
Butter
Cut rabbit up into small sections. Put the apple juice and apple
cider into a sauce pot and bring to a boil. Reduce heat to a simmer.
Put cut up rabbit in pot and cook slowly until done.
Remove rabbit and reserve. Bring the pot back to a boil and reduce by
2/3rds. Make a roux with the butter and flour. In a separate sauce
pot cook the roux until it is a golden colour. Do not burn. Add the
liquid to the roux and whisk until thickened. Remove and strain. Add
the rabbit to the sauce and reheat. Cut thin slices of apple and line
the inside of a flat bowl. With a slotted spoon dish up the rabbit
into the bowl.
