Title: Polish Potato Pancakes

Yield: 4 servings
4 md Potatoes
1 c Fine grated onion
2 tb A-P flour
2 lg Eggs
1 ts Salt
1/2 ts Pepper
Oil for frying
Sour cream and/or minced
Chives; for topping
Peel and finely grate potatoes. Place potatoes and onion
in a large bowl; drain any liquid. Add flour, eggs, salt
and pepper; mix well.
In a large skillet, heat 1/4 in. oil over medium heat.
Drop batter by 1/4 cupfuls; press lightly to flatten.
Fry until golden brown on both sides. Garnish with sour
cream and chives, if desired.
